The fruit is direct-pressed and the juice settled naturally for 12 hours. It is then fermented in stainless steel tanks with natural yeasts; the wine is aged on its lees in large, underground vats until bottling without fining or filtering.

This hand-harvested, single-vineyard wine is 100% unfiltered and unfined Chenin Blanc from Tunuyan within the Uco Valley. The villa Seca vineyard is roughly 12 hectares, planted in 1970 an an altitude of 3,300 feet, with alluvial soils. The wine was aged 6 months in bottle before release; unoaked. 850 cases produced.

Wine was fermented on the skins in two sandstone jars and direct pressed into one concrete egg and another sandstone jar to create this 2020 vintage. The juice on the skins in sandstone jars fermented and aged until January, then basket pressed. The juice went back into the sandstone jars to age for a few more months. All wine was fermented using only native yeasts, no sulfur was added during fermentation or at bottling, and the wine is left unfiltered showing its natural texture. It was aged for a total of 9 months.
