Grüner Veltliner
the process
For the “Getränk,” our friends at Dürnberg in the village of Falkenstein are using younger vines at higher altitudes. Approximately two-thirds of the grapes come from Dürnberg vineyards, with the remaining from two growers in the same village who closely follow the same rules of certified sustainable farming. Harvest can take place quite late, beginning in the end of September, which is a big advantage. The grapes preserve well-balanced natural acidity, and are collected and processed at cool internal temperatures, helping to avoid oxidation and any disagreeable aromas or flavors. Fermentation is done in temperature-controlled steel tanks, after which the wine rests for two months on the lees, followed by filtration and bottling.

Pinot Gris
the process
Eyrie pioneered the variety in the New World and the New World’s oldest vines contribute to this cuvée. Aged 3-4 times longer than most commercial versions, on its natural yeast lees and in the company of full malolactic. The result is textural suppleness to complement the acidity, and a surprising ability to age.

the process
Ample rainfall in the spring recharged the soil profile and provided a strong start to the growing season. The weather during the summer featured consistent warmth and sunshine without any major heat spells. Cooler than average temperatures in August and September slowed the ripening process, providing long hang time and leading to complex flavor development. October was mostly dry and warmer than usual allowing us to pick each block at optimal ripeness. The harvest was complete before November and the start of an epic rainy season. Aged 9 months in 13% New Oak Barrel. 61% Barrel Fermentation, 4% Malolactic Fermentation
